Real easy and economical to make your own fresh pesto.It is usually made with pinenuts and basil, but I made this with walnuts and coriander leaves.
Walnuts. 1 cup
Coriander leaves chopped. 2 cups
Garlic cloves 10-12
Parmesan or grated mozzarella cheese 3/4 cup
Olive oil 150ml
Salt to taste
White pepper powder 1/2tsp
Dry roast walnuts for a minute and cool.
Put in a blender with all other ingredients.
Whizz until coarse and chunky consistency.
Pour into a bottle top up with some extra olive oil.
Store in the refrigerator.
Can keep upto three weeks
