Sabudana (sago) 1cup
Potato peeled and cut in to small cubes 2 medium
Tomato chopped 1/2 cup
Peanuts 2 tbsp
Green chillies chopped 2
Curry patta few leaves
Cumin seeds 1/2 tsp
Mustard seeds 1/2tsp
Red chilli powder 1/2tsp
Salt to taste
Lemon juice 1tsp or more according to taste
Coriander leaves chopped 1 tbsp for garnishing
Wash sabudana well until the water runs clear. Keep aside adding 2-3 tbsp water so that it should remain moist.Cover and keep aside for 3-4 hrs.Fluff with a fork in between 3-4 times. You can check sabudana is ready for use when you are able to press it with fingertips, but it does not disintegrate so easily. The pearls should remain separate.
Take a pan add oil and fry peanuts to light brown take care it should not get deep brown, that will make it bitter. Remove and keep aside. Now in the same oil fry cubed potatoes till brown and crisp remove and keep aside.
Now take a skillet and add a tbsp of oil, when hot add cumin and mustard when splutter add green chillies and curry patta. Add salt and red chilli powder. Stir. You can add turmeric powder also if you like,but I do not add in mine. Add the sabudana and give it a quick toss with the rest of the ingredients. If you think it is little dry, then sprinkle 1 or 2 tbsp water and stir. Add fried potatoes,peanuts and lemon juice. Garnish with chopped coriander leaves.
When not fasting I add onion, tomatoes and other vegetables like capsicum, beens and chopped carrots. It is my comfort food, a healthy breakfast option. Given both the pictures.
