Vrat ke chawal or swang ke chawal is a very famous fasting food. We use to make this in navratra fasting when we abstain from cereal grains.In these fasts we eat fruits and special flour like kuttu,singhare ka atta or these swang ke rice
Ingredients:
Vrat ke chawal 1cup
Potatoes peeled and cubed 3 medium
Peanuts 1/4 cup
Green chillies chopped 2
Curry patta 8-10
Ginger chopped 1 tsp
Rock salt 1 tsp
Red chilli powder 1/2 tsp
Mustard seeds 1/4 tsp
Cumin seeds 1/4 tsp
Coconut shredded 1tbsp
Coriander leaves chopped 1tbsp
Lemon juice 1tsp
Oil as required
Water 3cups

Method:
Wash rice a couple of times in running water and soak in water for 20 minutes.Roast peanuts and coconut in a tsp of oil and keep aside. In the same pan fry potatoes till crisp and keep aside. In the same pan heat a tbsp oil add cumin and mustard seeds let them splutter.Add ginger and green chillies, sauté for a minute, add rice stir. Add salt, red chilli powder and 3 cups of water.Cook till all the water evaporates and the rice are cooked. Add lemon juice and coriander leaves. Now mix potatoes, peanuts and fried coconut.
Serve these rice with banana raita.
