My family is very fond of cakes and I usually prefer to make healthy cakes without much icing. I try to avoid so much butter and sugar.But some times I take the liberty to use these things with the combination of some fruits and nuts in moderation to creat something new and interesting. This time a made an apple cake with some rum and cinnamon used in it. It turns out very tasty and I get an alternate to my rum and raisin cake. I serve it with my caramel sauce.


All purpose flour 3 cups
Sugar 2 cups
Butter 1& 1/2 cup
Eggs 5
Baking powder 2 tsp
Soda 1tsp
Salt 1 tsp
Apple peeled and chopped 4 big
Rum 1/4 cup
Cinnamon powder 1 tsp

Per heat the oven at 180 degree for ten minutes. Grease a round 23 cm baking tin and dust with some flour. Keep aside.
In a large mixing bowl beat together sugar and butter until pale and creamy. Add egg one by one. Add chopped apples and rum. Sieve flour, salt, soda,baking powder and cinnamon together. Fold these dry ingredients to the butter mixture.Pour in the prepared tin. Bake at 180 degrees for an hour.But check after 50 minutes as it depends on the power of the oven .Mine takes 1 hr. Cool in the tin for 10-15 minutes and then transfer to a wire rack. Let it cool completely. Sprinkle some icing sugar with the help of a tea strainer and cut into wedges and serve.
Note: I serve it with caramel sauce and chocolate fudge sauce.
