Sometimes you do not feel to cook some elaborate meal. You want something quick, easy and at the same time healthy too. When I feel lazy to cook and do not wish to order something specific. I made masala parantha and egg sunny side up. My family relish this as a healthy breakfast option.
Wheat flour 200gms
Salt 1tsp
Red chilli powder 1tsp
Ajwain 1tsp
Cumin seeds roasted and powdered 1tsp
Chat masala 1tsp
Garam masala 1tsp
Oil 2tbsp
Milk or water as required for kneading
Oil for frying parantha
Eggs. 2
Salt and Pepper to taste

Take wheat flour in a mixing bowl. Add 2tbsp of oil and mix with your fingertips. Add all the spices and with milk knead to a fine and smooth dough. Cover with a wet towel. Keep aside for 15 minutes. Knock down and again knead for a minute without adding any liquid. Divide the dough in equal 4-5 portions. Roll each portion to a small disc, apply some oil and fold like a triangle and roll in to a big triangle. Heat a griddle, lay the parantha on hot griddle and fry both sides pouring some oil till brown and crispy. Remove and repeat with all the paranthas.Serve hot with pickle and raita of your choice.
I made mine with fried egg or egg sunny side up. Heat a non stick pan put a tea spoon of oil and break an egg over it. Take care you do not break the yolk. Cover with a lid and cook for 1-2 minutes. It will cook the egg white evenly remove it on a hot parantha sprinkle salt and pepper. Serve hot .
