This deliciously light and fluffy in texture orange cake is a refreshing dessert. It’s orangey flavour and sweetness is compatible with any meal without being overwhelming.

Flour 200gms
Sugar 250gms
Butter 150gms
Eggs 5
Baking powder 2tsp
Salt 1/2 tsp
Grated orange zest 1tbsp
Orange essence 1tsp
Orange juice 200ml.
Cream of tartar 1/2tsp
Orange peel thinly sliced 1/2 cup


Preheat the oven at 170c for 10 minutes. Separate the eggs. Sift the flour, granulated sugar, salt and baking powder together in a large mixing bowl. Make a well in the center and add egg yolks, orange juice, essence, zest, and salt. Whisk well and add melted butter. Set aside. Beat egg whites and cream of tartar with hand mixer until stiff peaks form. Gently fold the egg whites into the batter until well combined. Add the orange peel and pour the batter into a 10-inch tube pan and bake for 50 minutes or until a wooden skewer inserted into the middle of the cake comes out clean. Cool in the tin for 10 minutes and invert on a wire rack to cool completely.
