Ingredients:

Round brinjals 2 medium size
Soyabean granuals (soaked in warm salted water) 2cups
Onions chopped 2medium
Tomato puree 1 cup
Garlic paste 1tsp
Green chilli paste 1tsp
Flour 3tsp
Butter 3tbsp
Milk 300ml
Cheese grated 1cup
Salt to taste
Black pepper 1/4 tsp
Origano 1tsp
Basil 1tsp
Oil as required

Method :

Wash and cut the brinjals in 1/4″ thick round slices. Rub salt and keep aside. Heat 2 tbsp oil, add chopped onions,garlic and chilli paste.Saute add nuttri nuggets. Stir for 10 minutes.Add tomato puree, salt, pepper, origano and basil. Cook further 3-4 minutes.Remove from fire and keep aside.
Drain water from brinjals and pat dry with kitchen paper towel. Deep fry in hot oil. Remove and keep aside. Put butter in a pan. Add flour and cook for 3-4 minutes. Take care it do not get brown. Add milk. Take care lumps do not form. Add salt and pepper.Also add half the grated cheese. Remove and keep aside. Now assemble the mousaka. Take a rectangular oven proof baking dish. Spread the brinjal slices evenly. Pour in the nuttri granuals and some of the cheese sauce. Again the same layer. Finally spread cheese sauce and the remaining grated cheese. Bake in a preheated oven at 180 degree for 20 -25 minutes or till brown.
Serve hot with pitta bread or garlic toast.
