These days vegetable shops are flooded with white button mushrooms. My family loves mushrooms but at the same time they asked for something different. I usually made mushroom matar but this time I thought to make mushroom masala. We can have it as a side dish or we can fill in the bread to make sandwiches or fill in the tortillas or in the rumali roti to make a nice roll.

Mushroom 200gms
Onion Sliced 2
Tomatoes chopped 2 large
Garlic 3 cloves
Green chillies chopped 2
Salt To taste
Red chilli powder 1/2 tsp
Whole red chillies 2
Turmeric powder 1/4 tsp
Coriander powder 3/4 tsp
Cumin powder 1/4 tsp
Tomato purée 1tbsp
Coriander leaves chopped 2tbsp
Oil 2tbsp
Heat oil in a pan add whole red chillies then onions and stir fry for few minutes till brown. Add garlic, green chillies and tomatoes and cook further 5 minutes and the tomatoes are soft and mixes to the onions well. Add cumin powder, coriander powder, chilli powder, turmeric powder and salt. Add tomato purée and sliced mushrooms. Stir and cook covered till mushrooms are soft and oil leaves the pan. Remove and garnish with coriander leaves. Serve hot with phulka or roll in rumali roti with some salad.
