As the weather gets cooler what could be the best other than a masala chai recipe. Masala chai is a creamy, soothing beverage and a combination of good quality of Assam tea, spices,milk and sugar. We Indians offer a cup of tea to our guests as a sign of welcome and generosity. Usually masala chai can be made to suit personal taste and preferences. You can experiment with this simple recipe and adjust the spices according to your taste to make it a pungent and rich brew.
Ingredients:
Water 3 cups
Ginger crushed 1/2 tsp
Cloves 4
Fennel seeds 1/8 tsp
Cinnamon stick 1″ piece
Green cardamom 3 crushed
Black peppercorn 6 crushed
Black cardamom 1/2
Grated nutmeg a pinch
Basil leaves 4
Sugar 3 tsp or according to your taste
Milk 1 1/2 cup
Method:
Take a small saucepan bring water, ginger, basil, peppercorns, cinnamon cloves and both the cardamoms to a boil. Cover the pan and let it simmer for few minutes.After two three boils add nutmeg and mace. Add milk and sugar and bring to a boil once again.put off the flame and add loose tea leaves. Cover and let steep for 3-4 minutes. Strain the mixture into warmed teacups and served hot. You can replace sugar with honey.
