Another chilled morning of winter vacations, when my children are here with me. My grand child who’s always asking for some new breakfast, is still sleeping. This gave me some time to just think of a nice recipe for him to relish, before he gets up and starts his demand.
An easy and delicious suggestion came from my son to charge me up for a great start.

Ingredients:
Flour 1cup
Sugar 2tbsp
Salt 1/4 tsp
Baking powder 1 1/2 tsp
Baking soda 1/4 tsp
Milk 1cup
large egg 1
Vanila essence 1tsp
Melted butter 2tbsp

Method:
In a bowl, add all the dry ingredients and whisk to blend. In a smaller bowl, whisk the milk, egg, and vanilla until frothy. Add the milk mixture to the dry mix and whisk until smooth. Finally, whisk in the melted butter. Allow the pancake batter to rest for an hr. to rest.
Heat the griddle or a non-stick pan on a medium heat. Use a 1/4 -1/3 cup scoop to ladle the batter onto the griddle. Cook for 1-3 minutes per side. Flip when small bubbles rise to the top of the batter.Cook for a minute or golden brown. Serve hot with Nutella or maple syrup. I served it with strawberry sauce and stewed apple.
Note: If your batter thickens too much, add 1-2 tablespoons of milk to thin it just enough to pour.
Makes 6 pancakes.
