Ingredients:
Potato boiled and mashed 3 medium
Sabudana (sago) 1 cup
Peanuts roasted 1 tbsp
Fresh coconut grated 1/2 cup
Green chillies chopped 2
Coriander leaves chopped 1 tbsp
Salt to taste
Red chilli powder 1/4 tsp
Chat masala 1/2 tsp
Oil for frying
Method:
Wash and soak sabudana in enough water for two three hrs. I soaked it in 2-3 tbsp water and fluff with a fork in between. Roughly grind the roasted peanuts in the chopper. Now combine potatoes, sago, peanuts and coconut. Add green chillies, coriander leaves and mix properly. Season with salt, red chilli powder and chat masala.
Heat oil in a pan to deep fry the vadas. Grease your hands with little oil and take a little ball size dough from the above mixture and press it between your palms to give a nice shape of vada. Put these vadas one by one in the hot oil to fry until golden brown and crisp. Remove from oil on a grease proof paper. Serve hot with mint and coriander chutney .
