Hakka Noodles 300gms
Spring onion chopped 3
Garlic chopped 3 cloves
Carrots cut into julliens 2
French beans cut thinly length wise 6-7
Capsicum cut into julliens 1 medium
Cabbage cut into same size as carrots 1cup
Oil 3tbsp
Soya sauce 1tbsp
Green chilli sauce 1-2 tsp
Vinegar 2tbsp
Salt to taste
White pepper 1 tsp
Spring onion greens for garnishing 1tbsp
Green chillies soaked in vinegar 1tbs

Boil 7-8 cups of water with 1tsp oil and 1tsp salt. Add noodles and cook till al dent. Remove from fire and drain and rinse under running water. Apply a tsp of oil and spread on a flat surface till u prepare vegetables
Heat oil add garlic then onion. Saute on high flame. Add carrots and beans stir fry ,then add capsicum and lastly cabbage stir fry.Veges should be crunchy not too soft. Add salt and pepper.
Finally add noodles and vinegar, soya sauce and green chilli sauce. Give a quick stir and remove from fire.
Garnish with onion greens and serve with green chillies soaked in vinegar
