Potatoes are the best and very popular ingredient for fasting food. In this recipe I used boiled potatoes and cooked with fresh aromatic spices. You can have them with poori or paranthas.
Potatoes medium sized 4
Cumin seeds 1/2 tsp
Ajwain 1/2tsp
Mustard seeds 1/2tsp
Coriander seeds crushed 1/2 tsp
Coriander powder 1tsp
Chat masala 1 tsp
Mango powder 1/2 tsp
Green chillies chopped 2
Curry leaves 10
Red chilli powder 1/2 tsp
Black salt 1 tsp
Salt 1/4 tsp
Oil 2tbsp
Coriander leaves chopped for garnishing
Green chilli slit for garnishing
Boil and peel potatoes. Cut the potatoes into small sized cubes and put it into a large bowl. Add all the spices except cumin and mustard seeds over it. Heat oil in a pan add cumin and mustard seeds when splutter pour this oil over the potatoes and cover it with a lid. Let it remain as it is for 1/2 an hour. Put it in the microwave and cook for 2 minutes before serving. Serve hot garnished with coriander leaves and slit green chillies.
