If you are addicted to chocolate cakes then this one is for you.This is one of the best recipe from my collection. In this cake I used Brandied Prunes to give it a nice flavour and a tangy touch.You can made this cake on Christmas or on some special occasion.
Flour 1&1/4cup
Castor sugar. 1 cup
Butter 1/2 cup
Baking powder 1tsp
Salt 1/4 tsp
Dark chocolate 150 gms
Eggs. 3
Brandy 2 tbsp
Pitted prunes chopped 200 gms
Water 1/2 cup
Orange zest 1 tbsp
Place prunes, water, and orange zest in a sauce pan on low heat for 10-15 minutes. Keep aside to cool. Add brandy and stir. Lightly beat eggs. Grease a 20cm cake tin and preheat the oven at 180 C for 10 minutes.
Cream butter and sugar together. Add beaten eggs. Then fold prune mixture, chopped chocolate and flour together. Pour this mixture into the greased tin and bake for 40-45 minutes. Remove and cool completely on a wire rack.
Chocolate Ganache
Dark chocolate 200gm
Full cream 300ml
Butter cut into small cubes 25gm
Bring the cream to a boil in a thick bottomed pan. Place the chocolate in a bowl. Pour the warm cream over the chocolate and let it rest for a few seconds then whisk it gently to bring the emulsion together. Finally, stir in the pieces of butter until fully incorporated. Pour this ganache over the cake.
Put some decorations of your choice. I have some fondant flowers so I place them on the cake. Enjoy……
