Date and walnut cake is one of those desserts that is a true labor of love. So rich and decadant, it’s a cake that surely takes any special occasion to a whole new level and is by far one of my family’s favorite cakes. But this time I tried to make it more healthy and eggless too. This is made with wholewheat flour and oil instead of butter. It is super moist, easy and scrumptiously delicious.
Wholewheat flour 2cup
Cocoa powder 1/2cup
Soda 2tsp
Sugar 1cup
Salt 1/2 tsp
Oil 1 cup
Dates (seedless) 200gms
Water 1cup
Milk 1 cup
Lemon juice 2tsp
Walnuts 1/2cup
Soak dates in warm water and keep aside. Beat oil and sugar together.Sieve all dry ingredients together. Blend dates in a mixer add milk. Blend with the oil and sugar mixture. Fold dry ingredients to the sugar mixture lightly. Add lemon juice. Pour the mixture in the prepared tin and bake in the preheated oven at 180c for 40 minutes.
