I made these molten chocolate lava cake for my grandson Rudraaksh. He is so fond of good food that he usually have a list of dishes for me to make for him whenever he visits me in his vacations. These molten cakes are simply divine. I don’t have the words to describe them. They were so easy to make and hardly takes few minutes to bake. These are best to serve straight from the oven with the hot lava oozing out from the cakes.
Dark chocolate grated 1/2 cup
Butter 1/2 cup
Egg yolks 2
Flour 6 tbsp
Vanilla 1/4 tsp
Sugar and cocoa powder for dusting
Preheat oven at 200 c for 10 minutes.
Take a microwave safe bowl, add in chocolate and butter. Microwave it for 1 minute. Stir to combine well. Add powdered sugar and mix well. Add beaten eggs in it. Finally add all purpose flour, fold it lightly.
Grease the ramkins with butter and sprinkle cocoa powder. Pour the batter in it. At this stage you can refregrate it and bake at the time of serving.Bake for 12 minutes and take care not to over bake. Cool for few minutes then run a knife around the edges of the ramkins and flip it carefully. Serve it with icecream or fresh fruits
The key for the perfect lava cake is not to overcook the batter. The cake should rise a bit, ideally with a moist, fluffy, gooey texture, and glossy, fudgy top. The more you cook, the cake will toughen up and dry—so slightly undercook and keep an eye on it the whole time.
They are simply awesome, soft and moist. I serve it as it is and get polished off within minutes. You can serve with whipped cream, or ice cream if you like. And of course, with strawberries or raspberries—the perfect partner for chocolate. Enjoy!
