All purpose flour 2cups
Cocoa powder 3/4 cup
Sugar 2 cup
Oil 3/4 cup
Baking powder 2and 1/2 tsp
Soda bi carb 1tsp
Vanilla 2 tsp
Buttermilk 1 cup
Boiling water mixed with 2 tsp instant coffee
Semi sweet chocolate 250gm
Heavy cream 1 cup
Preheat the oven at 180 degrees for 10 minutes. In the mean time sieve flour, cocoa powder, sugar, salt, soda, baking powder in a bowl and keep aside. Beat eggs well and add oil, vanilla essence. Fold in flour lightly making a figure of eight alternately adding buttermilk. Finally pour in warm water. The batter will be thin. Pour the mixture into a 9″ round tin and bake for 35-40 minutes at 180c. Remove and cool in the tin for 10 minutes and then invert on a wire rack to cool completely before frosting.
Grate the chocolate and put it in a heatproof bowl. Heat the cream but do not boil. Pour over the chocolate. Gently stir together until smooth and glossy. Do try not to form air bubbles. Strain and allow to cool until just warm to touch. Pour the glaze over the cake and smooth quickly with a knife. Refrigerate the cake for 30 minutes or until the glaze is firm.
I had some fondant flowers so I decorate it with them .
