An easy, healthy and simple stir fried chicken. Whenever you think about cooking Chinese food with chicken the first dish which came into your mind is stir fried chicken. I made mine with some vegetables to make it more healthy and nutritious.
Boneless Chicken breast cut into 1/4 ” strips 250gms
Chopped garlic 2 tbsp
Ginger 2tbsp
Egg 1
Red chilli flakes 1/2 tsp
Salt 1/2 tsp
Soya sauce 1tbsp
Corn flour 4tbsp
Spring onion 1
Three colour capsicums cubed 1cup
Carrots cut into cubes 1/2 cup
Red chilli sauce 1tbsp
Rice wine vinegar. 1 tbsp
Oil as required
Spring onion greens for garnishing
Wash and pat dry chicken.Marinate chicken with vinegar,salt, half the ginger and garlic, egg and 2 tbsp corn flour. Keep aside in the fridge for 3-4 hrs.heat oil in a wok add chicken and stir fry till the chicken soft and cooked. Remove and keep aside. In the same pan add 1 tbsp oil, add remaining ginger, garlic and onion. Add carrots. Cook for 1-2 minutes and add all the capsicums stir fry for a minute add cooked chicken, salt, soya sauce, chilli flakes and rice vinegar. Add 1tbsp corn flour mixed with 2 tbsp water. Stir fry for further 1-2 minutes and remove. Garnish with chopped onion greens. Serve with steamed rice or noodles.
