Another classic North Indian dessert which can be served on coming valentine day. It goes well with the Indian cuisine. It is delicious and easy to make.
Rice soaked overnight 3/4 cup
Full cream milk 2lts.
Sugar 2cups
Cardamoms. 6
Saffron Few strings soaked in little milk
Raisins. a handful
Slivered almonds 20
Pistachios 25
Rose water or kewra few drops
Few slivered almonds and pistachios for garnishing
Drain water from rice and grind to a coarse consistency and keep aside. Pour milk into a large heavy bottomed saucepan, and bring to boil over medium-high heat. Mix rice paste until blended and add the crushed cardamom and saffron. Cook until the milk is thick and smooth, stirring occasionally to prevent scorching, for about 30 – 40 minutes. Add sugar and raisins, almonds and pistachios. Remove from heat. Cool and add kewra.Pour the mixture into individual small bowl, traditionally firni is served in small clay pots called kasoras. Refrigerate and serve chilled.
