In winter we got plenty of nutritious vegetables.Naturally sweet, delicious and crunchy carrots are one of them. Carrots are rich in anti- oxidants, vitamins and dietary fibre. Carrots are boon for weight watchers as it is low in fat and are rich source of vitamin A. and ther is no calostrol. They only contribute a small amount of calories to your diet, so you won’t have to worry about ruining your waistline. When I was a kid my mother used to give us carrots in all forms to protect our eyesight. We can have carrots in salads, soups,stuffed paranthas and even in our desserts as cakes, puddings . Here I am giving you carrot kheer’s recipe. It’s simple and made with very few ingredients.
Ingredients:
Carrots 1kg
Milk 2 lts.
Milk powder 1cup
Condensed milk 1 cup
Sugar 1 cup
Cardamom powder 1 tsp
Almonds 15-20
Pistachios 15-20
Raisins a handful
Method:
Wash and grate carrots.Boil milk in a heavy bottomed pan and add carrots. Cook on slow fire and keep stirring in between. Mix milk powder to half cup warm milk and add to the carrot milk. Simmer till the carrots are cooked and milk thickens to a creamy consistency. Pour condensed milk and stir well. Add sugar. Soak almonds in warm water for 2-3 hrs. or and microwave for 2 minutes and peel. Slice almonds and pistachios thinly. Remove kheer from fire and add almonds, pistachios and raisins. Serve hot or cold, it will be delicious both ways.
