Baingan bharta is an exotic North Indian preparation. It is made with roasted eggplants. Eggplant or brinjals are roasted over direct flame to give it a unique flavour and bharta refers to dishes in which the ingredients are roughly mashed. Here roasted and mashed eggplants are cooked with onions and spices. It is one of a favourite dish of my family. It is super easy to prepare. One can roast eggplant in an oven but I prefer my gas stove.
Eggplant or baingan 1 large round one
Onion chopped 6 medium
Tomatoes chopped. 4
Green chillies chopped 2
Garlic chopped 1 tsp
Salt to taste
Red chilli powder 1 tsp
Cumin powder 1/2 tsp
Coriander powder 1 tsp
Garam masala 1 tsp
Oil 3 tbsp
Coriander leaves chopped for garnishing
Wash and wipe one large eggplant. Apply oil all over it and roast it on direct flame of your stove. You can roast it in the oven also . But I roast it over my gas stove. Keep turning it till it is well roasted on all the sides and the skin starts peeling from outside. Remove and put it into a bowl of cold water. Peel the skin it will come out easily in the water. Wash it again and then mash it with the help of a fork or with a potato masher. Heat oil in a skillet, add cumin seeds then add onions and sauté till translucent. Add garlic and mashed brinjal and cook till oil separates. Then add tomatoes, green chillies and red chilli powder. Cook for 8-10 minutes. Add salt, coriander powder, garam masala. Further cook for 2-3 minutes. Remove and garnish with chopped coriander leaves. I garnished it with fried dry red chillies. Serve hot with tawe ka parantha.
