Soya bean is very nutritious and a great source of protein. It is also a best replacement of non-diary protein. Apart from beans soya bean is easily available in granules form and as well as chunks form. Soya granuales are very versatile and can be used in making patties, paranthas or some times in desserts also.Here I am using Soya granules to prepare a tasty dish with peas. It is called vegetarian keema matar.
Ingredients:
Soya granules 150gms
Green peas fresh 1 cup
Onion chopped 3
Tomatoes chopped 3
Tomato purée 1/4 cup
Green chillies chopped. 2
Ginger chopped 1″ piece
Garlic chopped 3 cloves
Bay leaf 1
Cinnamon stick a small piece
Clove 3
Cumin seeds 1/4 tsp
Coriander powder 1 tsp
Turmeric powder 1/2 tsp
Red chilli powder 1 tsp or to taste
Garam masala 1 tsp
Salt to taste
Roasted kasuri methi crushed 1 tsp
Oil 4 tbsp
Coriander leaves chopped for garnishing
Method:
Soak soya granules in warm salted water for 1/2 an hr.to puff up. Drain and wash with cold water, then squeeze out the water. Heat a tbsp oil in a non stick pan add cumin seeds and then soya granules and sauté till well roasted and lightly brown. Remove and keep aside. Heat the remaining oil in the same pan. Add sabut masala and then onions sauté till brown. Add tomatoes, ginger, garlic and green chillies. Add all the spices. Cook till tomatoes are done and leaves oil in the pan. Add tomato purée cook for a while. Add granules and peas and cook for further 2-3 minutes. Add a cup of water and cook till the peas are tender and oil floats over the surface. Remove and sprinkle kasuri methi. Garnish with coriander leaves and serve hot with naan or Parantha.
