
Desserts has a very special place in any cuisine. They plays a very important part in our food culture. No dinner is complete without a tasty dessert. Every cuisine has some special desserts for every occasion . In northern parts of India Malpuas and Rabri has a special place. Here I am giving a simple recipe for malpuas, you can eat it as it is or with rice Kheer or rabri.
Ingredients:
Flour 1cup
Suji 1/2cup
Sugar 1 cup
Milk 2cups
Funnel seeds 3/4 tsp
Pistachios and Almonds chopped 2tbsp
Desi ghee for frying
Rabri 2 cups
Method:
Take a thick bottomed pan, add milk and sugar. Put this on a medium flame. Cook this for 10-15 minutes, stirring all the time. Let it cool and add flour, suji (semolina) and funnel seeds. Mix to a smooth batter. Let it rest for half an hour.
Take a non sick pan and put it on medium slow fire. Pour 3tbsp of desi ghee, stir the batter and mix well, adjust the consistency. If it becomes too thick add little milk, pour a ladle full in the pan and shallow fry both the sides till golden and crisp. Remove on a paper napkin. Fry all the malpuas like this.
Serve the malpuas with rabri (thickened milk). You can serve these with rice Kheer also. Sprinkle a lot of chopped almonds and pistachios.
