Stuffed paranthas are a real life savers if you don’t have any time or mood to cook any eloborate meal but at the same time want to have some thing tasty, delicious and healthy too, then stuffed paranthas are the right choice. Stuffed paranthas can be made with different vegetables, mince meat or with lentils. But here I am giving a recipe with paneer which is cottage cheese. You can prepare this with homemade paneer or store bought ones. These can be served with fresh butter, curd or any pickle.
1 cup paneer ( 300 gms ), mashed
1 small Onion.finely chopped
2 tsp Coriander leaves, finely chopped
1″ peice Ginger, grated
1 green Chilies, finely chopped
Salt to taste
1/2 tsp Red chilli powder
Garam masala to taste
oil to cook , 1 tsp.
whole-wheat flour (atta) dough, as you would do for any parantha/roti.
In a bowl mix paneer, chopped onion, green chillies, chopped coriander leaves.Add all the spices to it and mix it properly.
Take a small ball of dough. Flatten the dough and roll it with a rolling pin.Make medium sized chapatti. Put a spoon full of filling on the chapatti and cover it from the sides so as to seal it properly.
Now roll it into a round parantha and take care the stuffing should not come out.On a preheated tawa (flat griddle plate), cook the parantha from one side, turn the side and cook from both the sides.Brush the side with oil and turn the parantha, shallow fry till golden brown and crisp.
Serve paneer parantha hot with yogurt (curd), butter and pickles.
