A beautiful Red Velvet cake on this valentine day and enjoy the love and warmth of your someone special.
Flour 21/2 cup
Sugar 11/2 cup
Butter 11/2 cup
Baking soda. 1tsp
Salt. 1/2 tsp
Eggs 2
Buttermilk 1cup
Vinegar. 1tsp
Cocoa powder 1tbsp
Vanilla 1tsp
Red colour 1tbsp
Icing :
Butter 1/2 cup
Cream cheese 1 package (200gm.)
Icing sugar 300gm
Vanilla 1 tsp.
Sieve flour, baking soda, salt and cocoa powder. But this time I made this cake without cocoa powder to get a nice red colour.
In a mixing bowl whisk butter and sugar. Mix it properly and add lightly beaten eggs. Fold in dry ingredients, colour, essence and vanilla. Finally add vinegar and buttermilk. Pour the mixture in 9″ round mould or in a heart shaped mould. For valentine day it will be appropriate to use heart shape mould and bake in a preheated oven for 45-50 minutes at 180c. Remove and cool on a wire racks or few hrs.or overnight.
Beat butter and cream cheese together with a hand mixer. Add essence and icing sugar until smooth. Keep in the fridge for an hr. Cut the cake horizontally into two even layers. Place base layer on a serving plate and spread with little cream cheese icing, top with second layer. Spread cake sides and top evenly with remaining cream cheese icing. Decorate as you like. Keep refrigerated.
