Here is a recipe for healthy and delicious carrot cake which is usually made with all purpose flour but I used whole wheat flour here.These days I tried to make my cakes more healthier using whole wheat flour,soya flour or oats flour. In this recipe I used all three and the result is awesome.everybody at home loves it. Do try and enjoy….
Ingredients:
Whole wheat flour 150gms
Soya flour 50 gms
Oats flour 50gms
Castor sugar 250gms
Butter 250gms
Peeled and grated carrots 250gms
Eggs 4
Baking powder 21/2 tsp
Salt 1/2 tsp
Cinnamon powder 1/4tsp
Nutmeg powder a pinch
Chopped walnuts 100 gms

Method:
Pre heat the oven at 180c for 10 minutes. Put butter and sugar into a bowl and beat together until pale and fluffy. Add eggs one at a time, beating well after each edition. Mix dry ingredients together and fold in the egg and butter mixture lightly. Stir in the carrots and walnuts. Spoon the mixture into a 8″ prepared tin and level the surface. Bake in the preheated oven for an hr. or until a skewer inserted in the center comes out clean. Cool in the tin for 10 minutes and then turn out on a wire rack and cool for 2-3 hrs.
