A piping hot bowl of soup is the ultimate comfort food during the colder winter months. I make this soup very often as it is healthy and nutritious also. More over my family loves wholesome soups with homemade breads. I am giving you a very easy recipe.
Ingredients:
Mushrooms 100gms.
Onion chopped 1/2 cup
Garlic chopped 1 tsp
Butter 2tbsp
Oil 1tsp
Milk 2 cups
Water/stock 2 cups
Salt to taste
Black peppercorns 7-8
Corn flour 2tbsp mix with 1/4 cup cold water
Cream 2tbsp.

Method:
Wash and chop mushrooms. Heat one tsp oil in a pan add mushrooms sauté for a while. Remove and keep aside. In the same pan add remaining oil and butter add garlic and onion sauté till translucent. Do not get it brown. Add mushrooms keep one tbsp aside.
Stir for a minute. Add water or stock. Cook for 10-15 minutes or pressure cook for one whistle. Let the steam release itself. Blend with hand blender. Add milk and further put on slow fire add corn flour and remaining mushrooms. Mix cream and adjust seasoning.Remove and serve hot.
