
Caramelised Apple Spice Cake
A delicious and innovative cake which I made for my son's birthday last year.I used caramalized apples and toasted walnuts with spices like cinnamon, nutmeg and dry ginger.I didn't use any icing as it didn't need any.The taste was so good and yummy that everyone relish it.
Who doesn't like cakes.At least in my family everybody loves to have it as dessert.I often bake different cakes for them.But this time as it was my son's birthday and he is a very fussy eater I wanted to bake something delicious and an innovative cake for him. He doesn't like heavy cakes with lots of icing or fancy decorations. So I thought to make something with fruits and nuts. I went through a lot of recipes and then finally decided to make Martha Stewart's Apple Spiced Cake with little variations.And I am happy with the outcome. My son liked it very much and took some pieces to office for his friends also.When he relish something I thought I got the fruit for my love and labour done for him.
Ingredients
- Butter - 1cup+1/2cup for apples
- Apple peeled cored and grated - 4 large
- Apple cider vinager - 1/2cup
- Vanilla bean - 1
- Sugar - 2 cups
- All purpose flour - 3&3/4 cup
- Baking powder - 2&1/2tsp
- Soda - 2tsp
- Salt - 1/2tsp
- Cinnamon powder - 1/2tsp
- Nutmeg - 1/4tsp
- Ginger powder - 1/4 tsp
- Brown sugar - 1/2cup
- Eggs - 4
- Sour cream - 1/2cup
- Walnut toasted and finely ground - 1&1/2 cup
Instructions
Put 1/2 cup butter in a PAN add vanilla,apples,1cup sugar and Apple cider and put on low flame.Cook for 2 minutes or until sugar melts and apples are soft.
Whisk together flour,salt, baking powder, soda and all the spices.
Beat the remaining sugar, butter and brown sugar together until pale, light and fluffy.Add egg one at a time.Add sour cream.
Fold flour, walnuts and apples. Add the syrup also.
Pour the mixture in the 23cm.prepared tin and bake in a preheated oven for 55-60 minutes at 170c or until done.
Remove from oven and let it remain in the tin for 10-15 minutes and then invert over a wire rack to cool completely.
