Arbi (colcacia) 250 gms
Onion sliced 1 cup
Ginger julliens 1 tbsp
Green chillies 3
Salt 1/2 tsp or to taste
Red chilli powder 1/2 tsp
Coriander powder 1 tsp
Cumin powder 1 tsp
Amchur powder 1/2 tsp
Garam masala 1/2 tsp
Cumin seeds. 1/4 tsp
Ajwain 1/4 tsp
Asafetida a pinch
Oil 2tbsp
Coriander leaves chopped for garnishing

Wash and peel arbi and dry it properly with kitchen towel. Cut the arbi into equal sized thin roundels. Take a wok and add oil when hot add cumin and asafetida and let it crackle add ginger and arbi and fry till half done. Add sliced onion and green chillies. Stir a while and add spices and cook further 2-3 minutes. Cover and cook till soft and and all masala mixes properly. Remove and garnish with coriander leaves.
