Sheer Khurma or vermicelli pudding is a festive dish or you can say a festive breakfast. Muslims prepared this dish on Eid. It usually cooked with dates but I make it as a quick dessert and without dates as my family doesn’t like dates in their milk preparations. I add a lot of nuts and raisins to make this dish more rich and delicious. This dish is best suited for the Independence Day. Previously I posted a recipe of Meethe Sewaiyan which is a thick variety cooked in water but this time I used a thin roasted Sewaiyan for this dish. I cooked these Sewaiyan in milk.
Full fat milk 1 lt.
Fine roasted Sewaiyan ( vermicelli ) 1/2 packet
Desi ghee or clarified butter 1 tbsp
Condensed Milk (Optional) 1cup
Saffron a pinch
Cardamom powder 1 tsp
Sugar 100 gm
Almonds slivered 10-12
Pistachios sliced 15
Raisins a handful
In a kadai heat ghee, roast vermicelli till light brown. Add milk and cardamom powder. Simmer for some time. Keep stirring all the time. Add condensed milk and sugar. You can adjust the quantity of sugar according to your taste. Soak saffron in 1tbsp warm milk and add to the vermicelli . Check the consistency of the milk, when it is thick and creamy put off the flame.
Add half the raisins and nuts. Transfer to the serving bowl and decorate with remaining nuts. You can serve it hot or cold. My family loves it chilled so kept it in the refrigerator for few hrs.
