Lemon rice is one of the most popular and often made rice preparation from South India.It is one of the easiest and simple dish which can be made with leftover or pre cooked rice.I made it with my left over boiled rice, adding some aromatic spices and roasted peanuts for crunch.

Cooked rice 1cup
Mustard seeds 1/4 tsp
Gram dal ( channa dal) 1 tbsp soaked for 1/2 an hour in water
Urad dal (split) 1tsp
Peanuts 20 -25 or a handful
Curry leaves 10-12
Green chillies chopped 2
Lemon juice 2tbsp
Asafoetida a pinch
Salt to taste
Turmeric powder 1/4tsp
Red whole chillies 3
Chopped coriander leaves 2 tbsp
Heat oil in a skillet add peanuts and roast for 2 minutes, take care it do not get brown. If you do not have leftover rice then boil the rice and make sure it is not mushy or over cooked. The grains should be separate. Cool a bit. Put a skillet with a tsp oil on fire, add broken red chillies, mustard seeds when splutter add lentils and fry for a minute. Add curry patta, asafoetida and turmeric powder and salt if not added in your cooked rice. Add rice and lemon juice. Stir well and finally toss peanuts in rice. Serve hot with some pickle and roasted papads.
