Paneer bhurji is a simple and very quick made dish. It can be cooked in a hurry within minutes and that also with very few ingredients.
Fresh Paneer (cottage cheese ) 250 gms
Onion chopped 2
Green chillies chopped 2
Cumin seeds 1/4tsp
Salt to taste
Red chilli powder 1/2 tsp
Turmeric powder 1/4 tsp
Coriander powder 1tsp
Garam masala 1/2 tsp
Oil 1tbsp
Coriander leaves chopped 1tbsp for garnishing
Green chillies slit 2 for garnishing
Heat oil in a pan add cumin seeds when splutter add chopped onions. Sauté for few minutes or till translucent. It should be soft but not too mushy like masala. Add green chillies and stir. Add salt, red chilli powder, turmeric powder and coriander powder.Cook for 2 minutes so that the raw smell of turmeric powder vanishes. Add crumbled paneer. It is best to use fresh homemade paneer for this dish. Add green chillies. Cook for two thee minutes. Add garam masala. Remove and garnish with coriander leaves .Serve hot with roti or parantha.
Note: This bhurji can be used as filling in many dishes like sandwiches, paranthas or in rolls.
